These muffins are perfect for this time of year. Serve them warm to make the perfect side to a hot meal or simply serve to guests with a nice hot cup of tea or coffee. The aroma of cinnamon creates that holiday smell throughout your home. Your guests will be sure to come back for more. They also freeze well so you will always have some on hand when unexpected company arrives. If you want to be really prepared you could whip up several batches of these and use them as a treat in the school lunches.

Ingredients

  • 1 1/4 cups cornmeal ( do not use cornmeal mix)
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon of sea salt
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1/2 cup honey
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk

Directions

Step 1

Start by preheating the oven to 350 degrees. Next, you want to prepare standard-sized muffin pans by greasing them or spraying with a nonstick cooking spray.

Step 2

You will need a large bowl for your dry ingredients. Whisk together flour, cornmeal, salt, baking powder, and cinnamon.

Step 3

To the dry ingredients, you need to whisk in the buttermilk, honey, and eggs.

Step 4

Now you can add the melted butter and then whisk until mixture has a smooth texture.

Step 5

Pour the batter into a measuring cup as this will make it easier to fill the muffin tins. Now fill the muffin tins with batter adding about 1/3 cup of batter to each until they are 2/3 full, as this will leave enough room for them to rise.

Step 6

They will need to bake for about twenty minutes. When the tops of the muffins have a golden brown color. You can tell if they are done by inserting a toothpick into one of the muffins, and if it comes out clean then you know they are ready to remove from the oven.

Step 7

You will want to let the muffins cool for about three minutes, then you can remove them from the tins and put them on a cooling rack or plate as they are now ready to serve.
